Making wine is an eternal beginning and it is never the same. Water, heat and wind have brought this je ne sais quoi that will make the same vines planted in the same soil will never give exactly the same juices, the same colors, the same sugar or acidity ... and it is all the art of the winemaker to redo year after year his wines.

So you have to taste and measure . The oenologist of course makes the technical and chemical measurements and suggests different solutions. The winemaker disposes, tastes again, questions his relatives, his regulars to decide, interrupt, assemble, leave to age still in new vats or barrels or several wines ...

Quite an art!
